Savarro is sourced from an ancient variety that was first recorded in the 10th century. Over time it has taken on many names including Savagnin and Bon Blanc.

An elegant vintage producing a delicate yet intense wine. Straw colour with white flower blossom and honeysuckle aromas. Textured lemon and lime palate with chalky minerality supporting a fine, long line of acid and finishing with traditional subliminal spice.

Winemaking

Our Savarro story opens in the Northern Italian region of Bolzano where the green-skinned, tight bunched grape was first recorded. Over the millennia it travelled to all corners of Europe taking on many names including Savagnin, Heida and Bon Blanc to name a few.

The cool climate of the Yarra Valley is perfect for our late ripening Savarro. The fruit is gently picked before being pressed and cool tank fermented on lees to retain the fresh aromatics of the variety.
