This is a vintage permitting wine and I have been able to make it a few times. The fruit is now exclusively sourced from two Grenache vineyards in the north of the Barossa owned and farmed by the Waechter & Falkenberg families. The grapes are hand harvested earlier than red wine production and pressed (Vin Gris style) directly into a stainless steel tank where a cool, natural fermentation to bone-dry takes place on full solids. No additions or adjustments for this wine bar one barrel of Viognier, just prior to filtering and bottling under stelvin capsule.
Pale gold with a touch of pink copper. The nose shows pink grapefruit, raspberries & strawberries. The palate shows restraint with delicate citrus, strawberry and a dry mineral finish. Perfect on its own or with seafood. Drink now or up to 3 years. 13.0% Alcohol.
