Nose: Medium to full intensity, blackberry morello cherry, thyme and wet earth.
Palate: Medium to full intensity, ripe cherries all the way ”“ round and warm mouth feel. Thyme, peppercorn and rich loam.
Food Match: Slow cooked pork shoulder.
Winemaking : This was the first time we processed at Tim Geddes new Winery in McLaren Flat and we were a bit short on room at the winery. He had just had the power hooked up a couple of days before vintage started, so we ended up fermenting the Shiraz and Mataro in old French barriques with the heads taken out. The Grenache came in a week later which went into an open fermenter and we pressed the whole lot together in the most glorious of basket presses we’ve ever used before. 9 months maturation in the old French barriques with the heads
