A golden colour with cristal-bright reflections.
The nose is powerfully rich and expressive with its aromas of stewed white peaches under-scored by hints of honey, spices, preserved ginger and nutmeg.
The entry on the palate is lively, well-defined and crisp.
The wine exudes delicate flavours of spices and fresh biscuit. Fine touches of stewed fruit, honey and roasted fresh almonds combine with these to produce a full-bodied and complex wine that shows perfect balance.
The finish is deliciously savoury, and lingers with a subtle hint of iodine.
Pinot Noir: about 60%, from the terroirs of Ay, Ambonnay, Bouzy and Mareuil-sur-Ay
Chardonnay: about 30%, from the terroirs of Avize, Le Mesnil-sur-Oger and Chouilly.
Pinot Meunier: about 10%, from the terroirs of Pierry and Montigny-sous-Chatillon.
Wine and food matching
This is a classy aperitif drink but will truly show its paces with the most refined dishes such as pan-fried foie gras, caviar, lobster, fine fish (grilled or with a light sauce) and white meat dishes incor-porating subtle exotic touches.
It is also the perfect companion for sushi and indeed for many other Asian dishes.
